Coconut rough French toast
200gm Coconut rough chocolate (cut in to 8 piece blocks)
1 large white loaf of unsliced bread
2 x eggs
¼ cup milk
2 tbsp caster sugar
1 tsp vanilla essence
Butter to fry
To serve
Icing sugar to dust
½ cup berry compote
Desiccated coconut
Maple syrup
(Or serve as is)
Method
Cut the loaf in to 4 large 4cm slices, on the top of each slice cut an incision big enough to fit the chocolate inside so it sits inside the bread but so you cannot tell it is inside.
Whisk together the eggs, milk, vanilla and sugar in a dish that will be big enough to lay the bread in
Heat a non-stick with some of the butter on a low-medium heat, dip each side of the bread into the egg mix and fry in the pan. Cook for approx. 2 mins on each side or until golden. Fry the edges of the bread, except for the side with the cut for the chocolate so the chocolate doesn’t escape
To Serve dust with icing sugar and top with the berries, coconut and maple syrup or enjoy just on its own
